Ingredients
4 eggs beaten
3 c thinly chopped zucchini, unpeeled
1 c bisquick
1/2 c onions, finely chopped
1/2 c grated parmesan cheese
2 Tbsp fresh parsley copped
1/2 tsp salt
1/2 tsp oregano, dried
1 dash fresh ground black pepper
1 clove finely chopped garlic
1/2 c vegetable oil
Directions
1. Preheat oven to 350 degrees
2. Grease 9x13 baking pan
3. In large bowl, mix all ingredients together. If the batter is too thick add a little water.
Pour into prepared baking pan.
Bake 25 minutes or until top is golden in color.
You may also use mini cupcake pans to make these as appetizers.
